This delicious Whole30-friendly salad combines crisp EverCrisp® apples, mixed greens, roasted sweet potatoes, and crunchy pecans for a naturally sweet and satisfying bite. A simple balsamic vinegar and olive oil dressing adds bright acidity, while grilled chicken brings protein to keep it filling.

Ingredients

    • 1 EverCrisp® apple, thinly sliced
    • 1 shallot, thinly sliced
    • 2 cups mixed greens
    • 2 Tbsp pecans, chopped
    • ½ cup sweet potato, diced and roasted
    • 2 x 6 oz. chicken breasts, grilled and seasoned with salt, pepper, and paprika
    • ¼ cup olive oil
    • ¼ cup balsamic vinegar, no sugar added
    • Salt and pepper to taste

      Directions

        1. Add the apple, shallot, mixed greens, pecans, and sweet potato to a bowl.
        2. To make the dressing: whisk together oil, balsamic vinegar, salt, and pepper. 
        3. Toss salad with dressing and top with grilled chicken.
